Last month I had the great pleasure of spending an afternoon in the kitchen with the amazing Mexican chef Javier Burillo. Javier’s cuisine is very authentic and promotes natural and locally sourced ingredients from states around Mexico. One topic which we discussed into great detail was avocados, the benefits of eating them and way that people can get more avocados into their life. These ‘gifts from the gods’ as many refer to them, are high healthy fats and packed with healthy oils and nutrients which have massive benefits in terms of physical and cognitive health. If you would like to eat more avocados but you are not sure how, here are some tips which Javier and I discussed which could help.
Guacamole
We’ll start off with the most obvious way of consuming more avocados and that is with the famous dip guacamole. This is a super simple dish which is made using avocados, some olive oil and a touch of tomato or chili. This is a dip which goes with all sorts of snacks from chips to potato wedges, grab a snack and a good dollop of guac for an awesome snack and one with some healthy benefits too.
Eggy Avocado
For a truly delicious and nutrient packed breakfast, go for this eggy avocado which is going to really set you up for the day. Cut an avocado in half and remove the stone, then with a spoon, scoop out the center but only take a small amount of avocado out. Set the avocado aside and boil a pan of water, once the water is boiling, spin the water and crack an egg into the center of the pan, put the lid on, turn off the heat and wait 4 minutes until the egg is done. Take the egg out of the water and place directly into the center of the avocado, add some cracked pepper, some sea salt and a touch of olive oil, then dig into this delightful breakfast.
Smash It
Smashed avocado toast has come in for a rough time of late, mainly because it became fashionable amongst trendy hipsters and the cafes serving it decided to hiccup the price for this simple snack. If however you are in the house, then you can make this whenever you like at a fraction of the cost. Simply get some sourdough bread and peel an entire avocado, using a fork begin to put pressure on the avocado until it starts to fall apart and then continue to do so until it is really mashed up. What you are looking for with the avocados is for it to be smashed, not pureed and not too chunky, a mixture between the two. Smear as much of this as you like on top of a piece of warmed bread, drizzle olive oil, add salt and pepper as well as some paprika and dig in.
